Ros's Tuna Cake

One of the most popular requests has been for this tuna cake.

It is really simply to make and quick to.

Ingredients:

1 small tin of tuna in oil

1 or 2 eggs

2 or 3 tablespoonfuls of flour - I am using buckwheat flour at present as it has a sweeter taste but any plain flour will do

1 clove of crushed garlic (or 1 teaspoon or easy garlic)

Place the tuna, egg(s) and garlic in a bowl and mix with a fork till smoothish.

Add a tablespoonful of flour and mix in throughly

When the mixture represents the texture of cake batter spoon it into a microwavable dish - the plastic containers you get with a chinese takeaway are perfect.

Cook on high for 2 1/2 minutes on high.

Turn the mixture over (if using an old takeaway dish put the lid on and turnover that way)

Cook for a further 2 1/2 minutes on high.

Don't over cook so the mixture is really hard. It should be set and not sticky.

Leave to cool for a few minutes then it will be ready to cut into pieces for training!
